I haven't been ignoring your question, I am just... not sure how to answer it, haha. The short answer is yes, you can get the gist by picking and choosing. There is an overall storyline, but (especially in the early seasons) there are also standalone eps that aren't necessary to follow the main plot.

The problem is that the show is not perfect. Sometimes really far away from perfect. Season 1 was cheesy and silly and delightful, but starting in S2, it got very frustrating at times. It was fandom that made it so epic for me, and it was fandom that kept me coming back. That said, even when the characters onscreen made me crazy, Merlin and Arthur's relationship is a thing of wonder. Even non-fandom articles have called the show a love story between Arthur and Merlin.

As for the fandom, it is incredible - the people, the fic, the meta. Without fandom, the show wouldn't have had the same emotional resonance for me. So if you plan to watch the show and poke around in the fandom, I would say yes, go for it, because there is some truly amazing stuff out there. I joined the fandom just after S1 aired, so my fandom experience stretched out over four years, during hiatuses and holiday exchange fests and fandom wars and so on. I can't really separate that experience from the show itself, so keep in mind that all of my opinions are based on the entirety of that experience. I have no idea what it would be like to watch all the eps over a short period of time without fandom.
